I absolutely love this salad - the crisp, crunchy vegetables mixed with the asian vinaigrette is to die for. Feel free to modify the veggies - add in some water chestnuts or top with slivered almonds instead of the chow mein noodles. This should make 6+ salads depending on your appetite :)
Asian Chicken Salad
Ingredients
3 heads Chopped Romaine Lettuce
2 cups purple cabbage shredded
1-2 thinly sliced green peppers
1 cup shredded carrots
2 cans mandarin oranges, drained
Shredded chicken
Chow Mein Noodles
Wash & chop your lettuce. Peel the first couple layers of your cabbage off then shred. Slice your green peppers and drain your oranges. Mix lettuce, cabbage, green peppers & carrots in a large bowl. To serve, place however much of the lettuce mixture you'd like in a bowl and top with shredded chicken, mandarin oranges and chow mein noodles. Top with vinaigrette (see below) and enjoy!
Sesame Vinaigrette
2/3 cup olive oil
1/4 cup rice vinegar
2 tbsp soy sauce
1 tsp sesame oil
squeeze of honey
salt + pepper
Mix all ingredients in a jar and shake!
